Veggie Casserole



It all started with 1 Red Pepper, 2 Zucchini, 4 small Sweet Potato.



I don't have a zestier, so i have to peel, Julianne, and finely chop



Then juiced the lemon and added the peels



Added 1 can of Black Beans, lemon, 3-4 tablespoons of minced garlic, salt and pepper.



Added the mix to a greased 13x9 pan



Chia Seeds for the omega fats stuffs




The Salsa Crema (recipe found here). This stuff is an excellent replacement for sour cream.

Bake at 350F for 40 minutes and enjoy
